Is it possible to over do it with oxygenating the tank say if you had two air stones going full blast?
To the best of my knowledge, no. The airstones don't directly add anything to the water beyond movement allowing for possibly greater circulation and certainly a larger surface area to the water (ripples) - it's through the water's surface that the gas exchange happens, ie CO2 is lost and Oxygen is absorbed. I think.

You can't over oxygenate............
...............but if you have plants it is counter productive to plant growth as it will drive off CO2 that the plants need. If you are adding CO2 for plant growth then over oxygenating is countering the added CO2 and you may as well not bother adding it in the first place.
